Heres some tips got at gamefaqs and on forums...

To unlock most of things, you'll have to get Gold trophies on cups.
Trophies depends on how many points you score.
It's seems you need 200 points more than your final opponent to get the gold ones.

To get Cactuar :
You have to score more than 800 points in the Casino court. It's unlock the desert court where you have to play in exhibition and dribble the ball on the head of cactuar when he appears in the sand. Once he comes out, he is added to characters list.

I didn't managed to get the white and black mages so far.
And I still miss most of the basketballs.
