Behind the GBA slot contacts, on the other side of the PCB, there are six large evenly spaced contacts.  What are these used for? Flashing the SC firmware?  If so could they be used somehow to restore a 'bricked' SC? (Where the SC's firmware has been erased/corrupted)

Not sure, I'll have to take a closer look. I was actually hoping that one of the newer firmware updates would have addressed the bricking issue. I would assume there is something the SC team can do on a software level to prevent unauthorized writes to the firmware, no?

Yes, you guessed right, that's a jtag connector, you can plug a Jtag cable (like the one used to program the superpass) and write r read to the rom, Darkfader has a tool to recovering it, and somebody was actually experimenting with those pins.
